Eco Mondays - Cauliflower rice


It's not news for anyone that the biggest world trend going on right now, which we can observe in every segment from fashion to culinary, is sustainability. From now on, our Mondays here on the blog will be dedicated to this theme. We'll approach easy and practical solutions in order to improve the health of the planet, and yours.

Today, the tip is in the culinary front and will also be great for those looking to shed a few calories from their diets. Did you know that you can make a great rice substitute using cauliflower?

The first step is to wash the cauliflower and cut it in small pieces that fit inside a food processor.

Then, it's time to sauté a little onion in a frying pan.

After that, you can process the cauliflower until you achieve the same texture as rice, If you don't have a food processor in hand, you can easily use a grater for that job.

Transfer your "rice" to the frying pan where you cooked the onions and let it all cook for about 5 minutes.

The result is surprisingly similar to white rice, without all the calories and a lower GI (meaning you will feel satisfied for longer).
